Description
Recioto predates Amarone by centuries, but until the final processes is made in the identical manner and with the same grapes (mostly Corvina and Rondinella). The grapes are mat-dried following harvest, and regulations stipulate that Amarones cannot be pressed before December 1st after harvest; Reciotos not until January 1st. That extra month creates even sweeter grapes. Producers tend not to oak age the wines as it leads to an unwanted oxidative character. This richly plummy and almost chocolaty version is great on its own, or serve with duck in a plum sauce.
Tasting Notes
This versatile Recioto strikes just the right balance of sweetness to make it a superb choice for entrees, cheese course or dessert. Aromas of plum sauce, blueberry pie, chocolate cherry, raisin and baking spice. Bright acidity and good aroma replays on the palate, with velvety tannins. Try it with cured meats, aged cheeses, mincemeat pie or dark chocolate. (VINTAGES panel, Sept. 2011)
