Founded in 1930, Olivares sources all its wines from sites with sandy soils that contain a high percentage of chalk. These soils have helped the estate avoid the ravages of the phylloxera louse, allowing them to have some 110 hectares of ungrafted Monastrell vines of nearly 50 years of age. This will be a smoky wine, with dark fruit and cassis. A good choice for beef stew.
