Tasting Notes
The 2007 Ripper Creek Cabernet Sauvignon (60%)-Shiraz (40%) spent 18 months in well-seasoned French oak. Dark ruby-colored, it, too, offers a beautifully fragrant bouquet leaning toward the darker side of the spectrum. Scents of wild blueberry and blackberry essence lead to a remarkably elegant, glossy wine with deceiving depth and concentration. Succulent, complex, and long, it will drink well for a decade.
