Description
Tokubetsu Honjozo on the label means either the rice was more highly polished (in this case 60% was removed) to expose the best part of the grain's core, or a special type of rice was used (here, Gohyaku-mangoku and Mutsuhomare rices).
Tasting Notes
Fascinating aromas of marzipan, licorice, coconut water and floral. Off dry, bright, vivacious and flavourful. There's a candied sweetness here followed by a rush of balancing acids. The licorice note replays on the finish. Try it with pork gyoza or grilled white fish with rice and a side of anise-steamed kale. (VINTAGES panel, March 2011)
