Tasting Notes
This is a lovely, pure, dense yet refined cabernet franc from Redstone Winery and its heavy (red) clay vineyards that can turn hard as stone in hot, dry summers, the sister property to Tawse Winery. I'd call this archetypical Niagara Cabernet franc at a high level, with evident low yields, full ripeness yet still fresh profile, and modest wood influence, well measured. Fruit hits high red notes, while classic varietal character of fresh tobacco, tarragon, and fennel seeds add complexity, without slipping over the edge into exaggeratedly green pepper/herbal flavours. Acids are well balanced though tannins are a little drying and dusty for the time being, so tuck this away for another 1-3 years for the full experience. Score - 90.
