Rivesaltes is one of five appellations for vin doux naturels in the Roussillon region. The 1969 is composed of Grenache, Grenache Gris and Maccabeu and was allowed to mature in barrel for over 50 years. The fermentation process is halted through the addition of alcohol to kill off the yeast. This allows unfermented sugars to remain in the wines, providing a natural sweetness. This extensive ageing in wood encourages the development of sophisticated and complex tones including dried fruit, tobacco, malt, cherry brandy, spice, walnuts, orange and coffee as well as highly defined rancio tones.
