Tasting Notes
The use of small-lot fermentation allows Sumac Ridge to precisely monitor every stage of development. This Cab offers up a wealth of juicy purple fruit, cassis, blackberry, black cherry, cedar and mocha, with grippy tannins. It would be interesting to give this wine another two years or so in bottle, but it would be brilliant with big red meats tonight. (Vintages panel, March 2019)
