To retain the fruit ' s bright flavours , it is not barrel - aged , but the juice is allowed to rest on the lees for an extended period of time to add complexity and fleshiness . Look for rich gooseberry , asparagus , grapefruit and mineral aromas and flavours . An ideal wine for lightly spiced seafood platters or a grilled vegetarian spread .
