Calvados ( apple brandy ) is the classic drink of Normandy . Over 200 different varieties of apples , many completely unique to the region , are permitted in its production . Some producers use as many as 100 different varieties in pursuit of the flavour profile they prefer . It is not overstating things to say that though apple brandy is made elsewhere in the world , no others taste quite like Normandy ' s . Classically enjoyed as a digestif after a big meal , it is also exceptional as a contemplation libation from a snifter , just as you ' d enjoy a cognac .
