The grapes for this wine ( 55 % Corvina , 15 % Rondinella , 20 % Croatina , 10 % Oseletta ) are given five to six months ' of drying - substantially more than Amarone ( three months ) and Recioto ( four months , on average ) - prior to pressing . The producer also use percentages higher than allowed in Amarone or Recioto for grapes other than Corvina or Rondinella and , therefore , uses the name Passito for this sweet dessert wine . Look for an enticing nose featuring prune , espresso , dark chocolate , tar and dried nuts . Sweet with good tannins supporting all the forceful flavours , it is super - intense and layered . Delicious now , it will also reward substantial cellaring .
