Tasting Notes
This Sauvignon is made more like a Chardonnay, with hand-harvesting, whole-bunch pressing, and fermentation in old French oak, a small portion undergoing malolactic conversion before maturing in old oak for 10 months. The result is that the flamboyance of Marlborough Sauvignon Blanc has been pared back. The well-judged oak use allows lemon and black currant to shine alongside subtle vanilla.
