Tasting Notes
Made from organically grown Sauvignon Blanc planted in 1989, this wine is soaked on the skins for six hours before pressing and is fermented at cool temperatures with wild indigenous yeast. It then gets extensive lees contact and stirring for 12 months before it's bottled unfined. Expect complex evocations of dried tropical fruit, garden herbs and hayloft, and pair with grilled fish and asparagus.
