Tasting Notes
To create the complex dark fruit, caramel, vanilla, forest floor and smoky oak tones in this sumptuous wine, 25% of the Cabernet was set aside to dry for 104 days in the traditional appassimento method. The wine was aged for one year in American oak and then a further five months in Pike Creek whisky barrels. Decant tonight with lamb, or cellar till 2028+.
