TASTING NOTE : Showing a Sauternes - style richness , the 2008 vintage of this estate - grown , Waihopai Valley beauty is a blend of 58 % tank - fermented Riesling and 42 % barrel - fermented Sauvignon Blanc , hand - picked between early May and mid - June at an average of 45 brix [ point of comparision , Ontario Icewine is usually picked at 36 brix ]. Pale gold , it is very fresh and vibrant , with impressively concentrated , honey - sweet flavours , showing lovely harmony and depth .
