Although legally XO Cognacs must be aged six years in barrel , many producers will mature theirs substantially longer ( some upwards of 25 years ). This one is matured for at least 10 years ( part of the blend is much older ). It ' s remarkable in another way in that the grapes are grown , and the product is distilled and matured , on the French island of Oléron which is considered part of the Cognac region . Expect a hint of saltiness along with the vibrant and fresh fruit tones .
