Vendemmia Tardiva means late harvest . Ninety - five percent of the Primitivo for this wine was allowed to raisinate on the vine , intensifying fruit flavours . They were picked , pressed , matured and then blended with 5 % other traditionally ripened red varieties . The resulting wine is rich and round , but also nicely freshened up by the addition of the 5 % other grapes . Enjoy this wine with marinated steaks or backribs .
