Penderyn , the solitary distillery in Wales , matures this intriguing , peated Single Malt first in ex - Bourbon casks , then in ex - Oloroso Sherry barrels . The result is a complex whisky showing aromas and flavours of roasted nuts , caramel , ginger and vanilla , with a smooth texture and a lingering , layered finish . Very fine neat , it opens up with a drop or two of filtered water .
