Tasting Notes
An organic, biodynamic wine from one of Emilia-Romagna's unique and iconoclastic producers. The winery's flagship wine, this is a blend of Cabernet Sauvignon, Barbera and Croatina. Fermented via wild yeasts for 20 days in steel. Aged for 9 months in French barriques, 50% new. This is an incredibly unique wine, full of intense, wild flavours and salty minerality.
