Raspberry eau de vie is made by fermenting , distilling and then quickly bottling ripe raspberry juice . The rapid process helps retain the true fruit essence , albeit in a very dry form . The resulting spirit is a classic partner in recipes , but at this level , it is a more than worthy substitute for cognac or even whisky . Because it is not sweet , the fruit essence is elegant and very refined . It is best sipped after a meal either at room temperature , or given a slight chill .
