About this product
Throughout their winemaking process, Twomey strives to have as little influence on the final wine as possible to encourage the emergence of each vintage's true provenance. To further this aim, they hand-sort their grapes, employ indigenous yeasts and move the wine through the winery with gravity rather than pumps. They ferment each lot separately before blending and careful ageing in French oak. This is a wine that will evolve for up to 10 years from harvest.
