Tasting Notes
Its very name, Glycyrrhiza glabra, meaning 'sweet root', points to the properties of this plant. Pier Andrea Mattioli, a 16th century physician, reported that licorice was used as a miraculous medicament in ancient Egypt and quotes Theophrastus, according to whom 'The root, chewed fresh, not only quenches thirst but delays hunger, keeping one's strength for several days'. Taste: sweet-bitter resinous, stimulating.
