Tasting Notes
Made in the traditional method from 100% Pinot Noir, this bubbly spent 12 months on the lees, bringing subtle toasty notes to a core of strawberry, raspberry and crunchy apple. Redstone winemaker Rene Van Ede recommends a drinking window through 2023 and food pairings of fresh oysters with shallot mignonette, cheese with cured meats, and fresh summer salads.
