Oz crafts a distinctive version of Semillon ( pronounced Down Under as SEM - ill - on ). Aussie winemakers impart lovely cut - hay , vanilla and floral notes to the ripe and juicy fruit by resting the wines on the lees ( i . e ., grape seeds , stems and yeast ), with the added bonus of imparting extra texture . This one has some bottle age and is beginning to show the smoky character that comes out in mature Semillon . Enjoy this one with grilled salmon steaks .
