Red Sancerre are very rare in our market ( though they do account for 20 % of the production ). Made from Pinot Noir , the resulting wines show terrific cool - climate Pinot character , including tilled earth , sour cherry , raspberry and beetroot aromas and flavours . Dry and very fresh , it ' s a great choice for lighter meats , such as veal , or a pork roast .
