Rare as hen ' s teeth , but still a legally recognized variety , is Pinot Blanc in Burgundy . In fact , the only white variety Henri Gouges even has in their own vineyards is not Chardonnay but Pinot Blanc . Gouges ' Pinot Blanc is known and respected for its honeyed floral notes with hints of pear and fresh apricot . It also has a very generous mouth - feel . A terrific wine to enjoy tonight with fish , poultry , or even as a sipper .
