Yuzushu/pure yuzu sake. Yuzu is a Japanese citrus, quite tart and slightly bitter, and present in both Japanese cooking, pastry, as well as alcoholic beverages. This beautiful example is made by Miyako Bijin, on the island of Awaji in the Seto Inland Sea, and is bursting with vibrant and tart citrus flavors, with just a small hint of sweetness to balance it out.
