DOCG regulations require that Vino Nobile wines contain at least 70 % Prugnolo Gentile ( the local name for Sangiovese ) and be aged for two years . Riservas , such as this one , must be aged a further year before release . Crociani ' s vibrant and fruit - forward version blends in local grapes Canaiolo Nero and Mammolo for additional character and structure . Enjoy this wine with roast beef or roast leg of lamb with a healthy handful of rosemary and garlic .
